Good evening! I made some good food over the weekend…Got in a lot of veggies! I made this salad beast on Saturday – I roasted some brussel sprouts and garbanzo beans (never roasted the beans before!) and put them on top of kale. I added a baked sweet potato and some fresh mozzerella. For the dressing I used some lemon, white wine vinegar, and a little olive oil. It was super good and filling! Really easy (except for the dishes!).
I also had some fresh strawberries with coconut cream on top – I LOVE coconut cream. I am using it on top of anything sweet (and sneaking spoonfulls straight out of the fridge).
I made an egg sandwich Sunday morning – a nice change from the normal waffles! I got to sleep in that morning, because Punkin has been sick and waking up a few times a night. Randy got up with the kids and they already ate breakfast, so I got to make what I wanted!! I fried up 2 eggs and had them with some provolone cheese and grape jelly. Sweet and savory!!
Here is the kind of bad part…I attempted to make this last week and it was a total fail, so I was determined to try it again. I bought some really ripe plantains.
I sliced them up and put them in the crock pot with coconut milk, maple syrup, cinnamon, and nutmeg. I got the idea from Tina at Carrots ‘N Cake. Apparently hers turned out wonderful. Last week when I made them, they turned out hard and tasteless.
This time, I would consider them less of a fail than last time. The milk got all curdely, which is a turn off. The flavor was good, especially fresh out of the crock pot. Of course I topped them with coconut cream. I have had them a few times, as I made a whole crockpot full, but they just aren’t great leftover. I am thinking I will just stick to apples. I am kind of craving some crockpot apple cinnamon oatmeal of some sort.
Made this salad for lunch Monday. I used leftovers from Saturday’s salad, but I didn’t have any garbanzo beans (I ate those as a snack on Saturday night). I added mushrooms and avocado this time. I was completely stuffed after this one. I got in SEVERAL servings of veggies here. I would say 5 or 6.
Another “bad”…We had a terrible storm on Sunday. We weren’t home, so I’m not exactly sure how bad, but there are now holes all over the cover of our swing set, and the kiddie pool was in my neighbors’ yard down the street.
This week is half over (woo hoo!!) but I am going to go ahead and post my meal/workout plan.
Sunday: Jillian Michaels’ 30 min. kettlebell workout DVD
Monday: Randy and I did a 100s workout. This workout was a DOOZIE!! Randy and I were begging for mercy halfway through and my arms are so sore I can barely move them. If you want to be beaten to a pulp, but feel amazing afterward, try this one! It took us about 50 minutes to complete. We want to try it again this weekend and see if we can do it a little faster.
Tuesday: My Buff Legs HIIT workout (I will post it tomorrow), abs, yoga
Wednesday: I am feeling super sore, so I think I will try to do a cardio circuit and lay off the weights
Thursday: Summer Shape Up Workout 2
I usually don’t workout 7 days in a row, but I feel like the yoga will do me good after this week’s workouts by working out some of the soreness and giving me a good stretch before the 5K.
Monday: veggie quiche with cauliflower crust
Tuesday: waffles and hardboiled eggs
Wednesday: Mexican Quinoa Casserole ( a go to as of late)
Thursday: Salad Beast
Saturday: veggie pizza?
