So this morning I decided to combat my green bananas (really?? you are still green after 3 days??), and make a French Toast Breakfast Scramble. I was thinking to myself “Ha, bananas! If you aren’t ripe enough to go in my overnight oats, I will just make the scamble. I don’t need you!” That was before I remembered bananas is one of the main ingredients in the scramble. Doh! Well, I was determined not to let it get in my way. I decided to make it with blueberries! Genious, right?!
Not really. It was boarderline gross. I only ate it because I knew if I didn’t, I would be hungry all morning. I’d rather be grossed out than hungry. I’d rather be pretty much anything than hungry. So I pushed through.
WORKOUT
So, no workout this morning. I still have this crazy cough and I was up half the night with it. I finally took some medicine at 2 am and got some broken hours of sleep. I decided I should sleep in the extra hour. I guess it helped, although it totally threw my morning off. I don’t like getting out of routine! I am wondering if this thing is going to go away?? May have to make a visit to the Dr. soon.
LUNCH
Nothing new to report, just leftover beans from last night (yum!) and a spinach salad on the side. No pics to share.
DINNER
My good friend Jen sent me a great recipe that my husband made tonight – Oven-baked Mexican Quinoa Casserole. It was super yummy, even the kiddos ate it. It takes a little prep work (sauteeing onions and garlic, then adding in spices and mixing it all together with quinoa and tomatoes, etc.), but was worth it (well I guess I can say that being that I didn’t make it). I am just happy it was a hit with the kids!! I liked the tomato flavor and, of course, topping it with avocado. Thanks, Jen!!
I have a new challenge to keep me motivated!! Amanda at Run to the Finish is hosting a Spring Bootie Buster Challenge, which is a challenge based on earning points for healthy eating and working out that go towards earning prizes. It looks like it will be really motivational and I feel like I will really like the interaction and support of the other participants. I like that some workout ideas are suggested, but you can really do your own thing.
